Bean and Cheese Empanadas

Ingredients

1 lb. of ground Turkey, Chicken, Beef or Pork 2 to 3 cups Mexican, cheddar cheese or a mixture. Spice the cheese with finely chopped Jalapeño peppers (optional) 1 can of rinsed and drained Black beans (optional) ¼ cup of diced onions ¼ cup diced bell pepper. The color doesn't matter or optional 1 tsp. of minced garlic (Optional) 1 beaten egg – optional ¼ tsp. cumin (optional) Salt and Pepper to taste 1 tbsp. of Olive Oil



1. Heat pan (preferably cast iron). When pan is hot, add oil. More if needed. 2. Combine, onions, bell pepper and cook until slightly translucent. 3. Add salt, pepper, garlic and beef or turkey to mixture and cook until done. 4. When meat is cooked, place in a bowl. 5. When discs are at room temperature, place about 1 ½ spoonful of the cooked mixture in the center of the discs. More filling if necessary. 6. Add as much of the cheese you like on top of the mixture. 7. Lay the disc on the counter or cookie sheet. 8. Using the egg mixture or water, wipe the edges. 9. Fold the disc over meeting the edges together. 10. With a fork, press the edges together. 11. Wipe the cookie sheet with Olive Oil to keep them from sticking. 12. When all discs are made, use the remaining egg mixture, brush the outside of the discs. 13. Place the disc on the cookie sheet and place in preheated oven until they are golden brown. Do not overcook the discs. 14. Your choice of dipping sauce Food shopping 1 lb. of ground Turkey, Chicken, Beef or Pork Mexican, Cheddar cheese or a mixture. Jalapeño peppers (optional) 1 can Black beans (optional) Onions, Bell pepper, Garlic Eggs, Cumin, Salt and Pepper Olive Oil

Preheat your oven to 350º

Vegan Empanadas dough go to: http://vegweb.com/recipes/best-ever-vegan-empanada-dough 14 oz of Black beans, drained and rinsed 1 tsp Hot Sauce (Optional) ¼ cup frozen corn, thawed 1 cup vegan cheese ¼ cup of diced onions ¼ cup of green onions and or cilantro ¼ cup diced bell pepper. The color doesn't matter or optional 1 tsp. of minced garlic (Your Choice) Salt and Pepper to taste 2 tbsp. Olive Oil (more if needed)

Using water, wipe the edges. 8. Fold the disc over meeting the edges together with a fork, press the edges together 9. When all discs are made, use the remaining water mixture, brush the discs edges. 10. Place the disc on the cookie sheet and place in preheated oven until they are golden brown.

11. Do not overcook the discs.
