Chicken Lollipops








Ingredients

Chicken Lollipops and BBQ Sauce from Scratch


4 medium size chicken legs per student. Not the small chicken legs.

BBQ sauce

1 ½ cups Ketchup

4 fl. oz. of Apple Cider Vinegar (Bragg brand)

2 table spoons white granulated cane Sugar

2 tbsp. Molasses (Grandma’s brand)

1-2 tsps. hot sauce

1 tsp Da Kine Spicy Rub

(Bacon is optional)

½ tsp of salt to taste

½ tsp of pepper to taste



Directions for the chicken legs

Preheat oven to 350 degrees Fahrenheit.


  1. With a sharp knife, cut about 2 inches of the skin/meat from the top of the bone down to the middle base of the leg. (Meaning, scrape the excess skin and tendon off). The bone should be visible from the top to where most of the chicken meat is. See picture above.

  2. Turn the leg on the side, and at the bottom with a very sharp knife, cut a very small piece the bottom of the leg to make flat.

  3. Try and stand up the chicken leg on its base. If it is leaning to the side, then cut a little off at a time until the leg stands up.

  4. In a bowl, season each Chicken leg with, Salt, Pepper, Onion Powder, Da Kine Spicy Rub, (Optional or use your special spicy seasoning)

  5. Wrap each Chicken leg with one slice of Bacon. (Optional)

  6. Stand Chicken legs on a baking sheet lined with parchment paper.

  7. Cook Chicken legs until the internal temp is 165 degrees or well done.


Making the BBQ Sauce

Remember, you are making BBQ sauce from scratch. Your BBQ sauce will taste great, but remember it’s not store bought so you won’t have preservatives and flavor enhancers. You will have pure homemade BBQ sauce. At home, you can add anything seasonings you choose. But remember to add a little at a time. If you add to much, you can’t take it away.


Let’s get ready!

In a small pot, add: Ketchup, Apple Cider Vinegar, Sugar, Molasses, Hot Sauce, Onion Powder, Salt and Pepper to taste.


  1. Stir ingredients in the pot under a VERY low simmer. Remember to watch and stir so ingredients don’t stick. Taste as you go along you can add additional flavor.

  2. After about 5-10 minutes of simmering, and tasting, your BBQ sauce is ready.

  3. Adding BBQ Sauce to Lollipop Chicken legs.

  4. Add your sauce in a bowl, now dip each cooked leg in the sauce and return to the tray standing up.

  5. Finish cooking the legs with the sauce on them. Remember to NOT overcook chicken leg or they will be hard. Now it’s time to serve and eat.
